The secret to a really good strawberry pie is to use smaller, delicious berries.
Glazed Strawberry Pie
5-6 cups washed/hulled strawberries
1 cup or less sugar
3 1/2 Tablespoons cornstarch, packed down
1/2 cup water
1 9" baked/cooled pie shell
Whipped cream
Mash 2 cups strawberries. Mix sugar and cornstarch in a 3 qt. saucepan. Stir water into mashed berries, and add to pan. Cook over medium heat, stirring constantly, until mixture comes to a boil. Boil 2 minutes (the glaze should become clear), and remove from heat. Cool.
Carefully fold remaining berries into cooled mixture. Pile into pastry shell and chill for at least two hours. Serve with whipped cream.

So I'm thinking it would be better to mash up the bigger berries and save the smaller ones to fold in whole... because the bigger ones will get mixed with sugar. Right?
I'm making this today with strawberries I am going to pick in about two hours. Can't get much fresher than that! It is going to be SO yummy! :-D
